Easy breakfast recipes - Breakfast is perhaps the most important meal of the day. It’s the first fuel your body receives, kicking your metabolism into good shape for the rest of the day.

In about 1700, the average man would expect to live until his mid-forties, today we can expect to live well into our eighties, and more and more people are reaching 100. There is no single answer to living a long healthy life, but the food we eat has to be seriously considered.

Tips for healthy eating

  • Choose lean meat such as fresh fish, chicken, turkey and veal.
  • Avoid fatty meats like sausages, most cold meats and pastries.
  • Cut down on butter and cream - use low fat substitute instead.
  • Use low fat cheese such as cottage cheese.
  • Herbal teas are a healthy choice over tea and coffee
  • Nuts are such a good source of protein, eat them with a meal or as a snack
  • Eat five portions of fruit and five of vegetables every day
  • Drink eight glasses of water every day.
Before preparing and eating easy breakfast recipes, try drinking a glass of warm water; it’s a great detox which your body will appreciate. Water can be used immediately by the body, add juice to the water and your body has to work at identifying and separating the molecules before using the liquid.

For refreshing but simple easy breakfast recipes, choose stewed fruit such as apples topped with fresh natural yoghurt. As a treat eat some strawberries, topped with yoghurt with a sprinkle of almonds and runny honey. If you have more time, poach some smoked fish and wash it down with fresh orange juice. If you are really pushed for time prepare a homemade smoothie or a homemade fruit juice the night before.

Home Made Low Fat Yogurt
  • 575ml skimmed milk
  • 141g of natural low fat yogurt
Make sure the yogurt you use is fresh. Bring the skimmed milk to the boil, cover and allow to cool to 43degrees centigrade. Add the yogurt and mix together. Pour the mixture into a warmed wide necked vacum flask. Seal the flask and leave for at least 8-10 hours. For an extra special treat add chopped fresh fruit to the yogurt before serving.

Sunshine Start
  • 2 tablespoons of bran buds
  • 1 tablespoon of rolled oats
  • 1 tablespoon of bran
  • 25g dried apricots, chopped
  • 25g sultanas
  • 25g almonds, chopped
  • 15g sunflower seeds
  • 1 piece of chopped fresh fruit (your choice)
Mix all ingredients together. Serve with skimmed milk.

Kedgeree
  • 350g smoked haddock
  • 175g long grain rice, boiled and drained
  • 113g packet frozen peas, cooked
  • 2 tablespoons skimmed milk
  • 50g low fat spread
  • ½ teaspoon nutmeg
  • 1 teaspoon lemon juice
  • Pepper to taste
  • 2 tablespoons parsley chopped to garnish
Poach the fish in fresh water for 15 minutes. Drain and flake. Remove all the skin and bones from the fish. Mix with the rice and peas. Melt low fat spread in a saucepan and add all the ingredients. Stir continuously over a low heat for 3-5 minutes. Garnish with parsley.
